In a bowl, mix chopped hard-boiled eggs, mayonnaise, celery and green onion. Sprinkle with salt and pepper to taste. Mix with a spoon. Take 2 slices of untoasted bread, put a layer of lettuce and the egg salad on both. Top them off with the other two slices of bread and enjoy!
